Description

This dip is such a gorgeous colour and the flavour is earthy and sweet from the beets but balanced with the brightness of the lemon.  A great item to bring to a potluck. Serve with pita, slices of baguette or crudité for dipping.

Ingredients
  • 225 grams cooked, peeled beets
  • 3-5 tablespoons fresh lemon juice (about the juice of 2 lemons)
  • 1 tablespoon lemon zest (of 2 lemons)
  • 2 tablespoons tahini
  • 1 clove garlic (use one on the smaller side here, peeled and chopped)
  • salt (to taste)
  • ground pepper (to taste)
  • 1 teaspoon ground cumin (optional, the original calls for 1T but we thought it was too much with our cumin)
Instructions
  1. Blend all ingredients, except the salt and pepper, until smooth-ish (it will never get perfectly smooth). Add salt and pepper and adjust to taste.

Note

As I said in the video, if you want to bump up the protein in this dip, you can add some plain Greek yogurt or Skyr. Just stir it in at the end.
