Description

This dry rub can add lots of flavour to any kind of meat - chicken wings, a roast, chops etc. You could use it for tofu but we didn't love it for that. It also can help create a crust or a crispness on the outside of meat.

Makes about 2/3 c and keeps indefinitely.

Ingredients
    The Core ingredients
  • 4 teaspoons salt (sea salt or kosher salt)
  • 4 teaspoons sugar (we used brown but you can use whatever sugar you like)
  • The Adaptable ingredients
  • 2 teaspoons ground black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme
  • 1 teaspoon dry mustard powder
  • 1 teaspoon Hungarian sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (hot or mild)
  • 1/2 teaspoon ground allspice
  • 1/2-1 teaspoon cayenne (depending on how much heat you like)
Instructions
  1. Mix all the ingredients together and store in a jar with a tight-fitting lid. If it's clumpier than you like, whiz it altogether in a small blender or dedicated spice grinder.
