Flourless Peanut Butter Cookies

Description

You don’t need flour or butter to make these cookies - and only 5 ingredients! You can easily halve the recipe as it makes 40-48 cookies.

When our youngest was 8 years old he made this recipe from start to finish by himself...it's that easy.

Ingredients
  • 2 cups natural peanut butter (just peanuts and salt, non-homogenized, smooth or crunchy)
  • 2 cups sugar (white sugar or coconut sugar)
  • 2 large eggs
  • 2 teaspoons baking soda
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine salt
Instructions
  1. Preheat the oven to 175C/350F. Lightly grease a cookie sheet with a neutral oil like sunflower or peanut oil.

    Using a mixer, a hand mixer or just a spoon and bowl, cream the peanut butter and sugar together until fully incorporated. If you're doing this by hand it will take some work but it is do-able.

    Add the eggs and mix again. Add the baking soda, vanilla extract and the salt and mix again.

  2. Roll the dough into approximately 1 inch balls and place about 2 inches apart on the cookie sheet.

    Using a fork, press the tines into each ball to create a groove pattern and smoosh the cookie into a disk shape instead of a ball. You can create a cross-hatch pattern by pushing the tines of the fork a second time 90° from the first impression.

  3. Bake for 8 minutes. Take the cookie sheet out and let rest for 5-10 minutes before trying to move them (they are delicate until cool!) or they will crumble.

    Repeat until all the dough is used.
