This is more technique than 'recipe' and is NOT suitable for canning as it does not contain enough sugar in it to be safely preserved. This micro-batch is a great way to use a small amount of fruit that may be getting past its prime. You can use fresh or frozen fruit and any refined sugar alternatives you like. The jam needs to be refrigerated after you've made it and used fairly quickly (5-7 days?). This amount made approximately 1/4c.
Use a skillet or frying pan over medium-high heat and stir constantly. When you pull your spatula through the bubbling mixture and the gap created by your spatula takes a couple of seconds to fill in, instead of right away, your jam is done. It's that fast and you probably already have the ingredients in your house to make a batch right now! |
